Quesadillas

  

Another one from my husband… He had such a creative technique when making quesadillas. Got me thinking I’ve been making quesadillas wrong for many, many years. Instead of placing the ingredients in the tortilla and frying, he mixed them all in a bowl first and placed his mixture on the tortilla. Makes a lot more sense than trying to load a bunch of ingredients onto a quesadilla one by one. Call me blonde or dumb and maybe this is a technique known by many… But not me! 

Chicken:

1lb Organic Smart Chicken breast tenders 

1 tsp Paprika

1 tsp cumin

1 tsp ancho Chili powder

1 tsp Garlic powder 

Rub chicken then sautée until cooked all the way through. Remove chicken and diced into small pieces.

Quesadilla mixture:

Diced chicken:

3 small red sweet peppers chopped

1/2 diced shallot 

5 grape tomatoes

1/4 cup chopped cilantro

1/2cup nonfat Greek yogurt

1tbs Jacks special salsa

1/2cup low fat Mexican shredded cheese

Whole wheat Mission tortillas 

Spoon mixture onto 1/2 of a Whole wheat Mission tortilla then sautée both sides in a frying pan with oil until cheese is melted (about 4-5 minutes).
