Asian Zucchini Salad

  

Have to give the credit to my hubby for this one. It was such a fresh side that we paired with some grilled chicken and whole grain rice. 

You will find that we absolutely love cilantro in this house. I have heard many people have an odd chemical make up that makes cilantro taste like soap. I am so sad for those people!! It is an amazing herb that we use for pretty much every Asian or Mexican themed dish we make. If you don’t like cilantro and you find a recipe that calls for it here on my blog, you can always sub for fresh basil. 

1 organic zucchini chopped

2 organic Roma tomatoes 

1/4 red onion chopped

1/4 chopped red bell pepper

1/4 chopped green bell pepper

1 clove of minced garlic

Juice of 1/2 a lime

Chopped cilantro 

1/2 cup Soy sauce

1/3 cup hoisin sauce

1/3 cup rice vinegar

Chop all ingredients up and add sauces. Let the salad sit in the fridge about 20 minutes before eating so the veggies can soak up some flavor!
