Homemade Burrito Bowl

This past Tuesday evening I was solo for dinner. After a tough work out I was in need of a hearty protein filled meal! I have pretty much been craving Mexican food all week. I love mexican food! I think most Americans feel the same way I do.

When eating Mexican food out at a restaurant you can always get such an awesome deal… You get a lot for your money. I always worry if that’s a good thing or not considering the plates are piled miles high with cheese and sour cream and a baby garnish of iceberg lettuce. It’s totally worth it though for a cheat day!

This recipe is a healthy-homemade version of a burrito bowl. It would have been awesome topped with black beans and avocado if you like them but I was out. Always be sure to top your favorite homemade Mexican dishes with my one true love… Cilantro… and it will be perfecto!

Recipe:

1.3 lb ground turkey

1 tbs chili powder

1/2 tsp garlic powder

1-1/2 tsp cumin

1/4 tsp onion powder

1/4 tsp crushed chipotle chili flakes

1/4 tsp oregano

1/2 tsp paprika

1 tsp kosher salt

1 tsp black pepper

3/4 cup water

1 cup julienned iceberg lettuce

1/2 Roma tomato diced

1/8 cup diced onion

1/4 cup nonfat Greek yogurt

1 tbs chopped cilantro

1/4 cup organic brown basmati rice

Cook rice in a rice cooker.

Brown ground turkey in a frying pan. Drain. Add seasonings and water. Simmer 5 minutes or until sauce thickens.

Start off bowl with rice in bottom, top with 4oz ground turkey mix, garnish with lettuce, tomatoes, onion, greek yogurt and top with chopped cilantro.
