Crazy Cauliflower “Potato” Salad

HAPPY FRIDAY! Here’s Wednesday’s lunch… just getting around to posting….

Thought process for this meal: What can I make with cauliflower that is potato like? Potato Salad! Yummmmmmmmmmmmmm. It only has one tablespoon of mayonnaise and the rest is made with Greek yogurt.

WARNING: *This recipe contains no potatoes*

2/3 of one head of Cauliflower, chopped and blanched

8 chopped baby carrots

5 stalks of chopped celery

1/2 of a yellow onion chopped

2 chopped hard boiled eggs

1/2 cup Greek Yogurt

1 tbs light mayo

1 tbs white vinegar

2 tsp celery salt

1 tsp ground pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

2 tsp Worcestershire sauce

Blanch cauliflower first. Boil for a few additional minutes if you prefer softer cauliflower to better mimic a potato (I kept mine fairly firm). Stir all ingredients together then fold in hard boiled eggs at the end. Add salt to taste.

A healthier option to potato salad… it even had Chef’s approval…
