Oh so easy meal… High in protein… and Delicious… What more could you ask for in a Thursday night? Ok… Maybe a Margarita to go along with it but I have to save that for cheat time.
Week after vacation we’ve all jumped right back into the swing of our everyday life and I’ve have to get back in the gym. Trying to stay healthy with fast meal options and this is what I came up with.
It had to be a quick dinner because Zay had a play date last night. We always have so much going on between school, extracurricular activities, work, and trying to squeeze in fun time. I HAVE to do fast meals or else I’m scrambling at bed time.
Zaylee always requests plain turkey so hers had only salt and pepper. I’m working on that. She has been working really hard every day this week at Equestrian Camp so she needed a high protein meal.
She is already a twig so I have GOT to load her up with calories. She informed me that they made her muck the whole ring today and surprisingly she still wants to go back!
It took about 30 minutes to cook this meal… Now that’s what I call service on a Thursday night!
I cooked with Harissa for this meal… I use it fairly often since we bought a bunch of Williams Sonoma’s seasonings after our wedding. Find the link to buy the Harissa here. Kevin picked it out and said it was one of his favorites. It has a taste similar to that of taco seasoning.
Use 1.3 lb ground turkey (we buy 93/7)
2 t garlic powder
2 t onion powder
2 t oregano
2 t chili powder
2 t paprika
1 T Harissa spice
1 t kosher salt
1 t pepper
1/2 C unsalted canned tomato sauce
1 T water
1 red bell pepper-sliced
1/2 sliced yellow onion
1 T extra virgin olive oil
1 head of Romaine lettuce
Serve with cilantro, shredded cheese, and plain nonfat Greek yogurt.
Spray a frying pan with olive oil cooking spray. Heat the pan up over medium high heat. Add ground turkey and cook all the way through. I did not have to drain the turkey since it was so low in fat.
Add tomato sauce and all seasonings to turkey. Bring to a boil. Simmer until sauce is thick and not runny. Remove turkey from pan.
Heat olive oil over medium high heat (with remnants from turkey). Add onions and peppers. Saute about 5 minutes or until veggies are tender.
Add turkey meat back to pan and warm for 1-2 minutes.
Serve over a bed of romaine lettuce and add your favorite toppings!
