Buffalo Turkey Meatballs

Um yes please. It’s Wednesday and I need some good food in my belly. These meatballs are super simple and super quick. I used 93/7 grade turkey with only a small amount of cheese so they are very lean. The sauce paired with them perfectly. 

Start by mixing all ingredients together in a mixing bowl. Get down and dirty… Use your hands… It’s the easiest way to mix it all up. (Please wash them first)! And don’t forget the Cilantro unless you think it tastes like soap.


Next, form meatballs and place them on a flat surface or plate. You’ll sear them in a pan before you bake them to give them a nice crisp outside.

 While baking, make your sauce:  


1.3 lb ground turkey (93/7)

1 tbs blue cheese crumbles

1 tbs shredded Parmesan cheese

1 tbs whole wheat Panko breadcrumbs

1/2 cup Franks red hot sauce

2 small cloves minced garlic

1/4 of a yellow onion minced

1 tbs minced cilantro

2 tsp paprika 

Kosher salt & ground pepper

Preheat oven to 400 degrees. 

Mix all ingredients together in a mixing bowl. Form meatballs with hands… About 2 inches big. Spray a nonstick pan with olive oil cooking spray and warm over medium high heat. 

Sear 2 minutes each side until lightly browned. Bake for 10 minutes. Let them sit for about 5 minutes after you remove the pan from the oven. 


1 can organic tomato sauce

1 tbs Franks Red Hot Sauce

1 tsp paprika

2 tsp garlic powder

2 tsp onion powder 

1/2 cup low sodium chicken broth

While baking meatballs add all ingredients to a saucepan or small pot. I cooked it in the same pan I seared the meatballs in and used the small amount of drippings in the sauce. 

Bring to a boil. Simmer 5-8 minutes or until sauce thickens slightly. 

Serve over orzo and enjoy!!!
