Cauliflower Pancakes

 
Thanks to my chef this was my side for dinner on Wednesday. I definitely could’ve made a meal out of it… Yummmmmm

1 head cauliflower

1/2 cup shredded Parmesan

1/2 cup shredded mozzarella

1/2 cup breadcrumbs

2 tsp garlic powder

2 tsp onion powder

1 tbs fresh minced parsley 

1 tbs whole wheat flour

2 eggs 

Pulse cauliflower in food processor until it’s the consistency of rice. Beat the eggs in a separate bowl. Put the cauliflower in seperate mixing bowl, add eggs and all other ingredients except for the flour and breadcrumbs. Stir everything together. Fold in flour and breadcrumbs at the end. 

Form 4-inch flat patties with the mixture. Sear them in a bit of olive oil, 2-3 minutes each side.

Garnish with parsely.
