Been gone for awhile. I made some super easy yummy egg muffins the other day and had some inspiration to write again because of how delicious they were.
This was so easy to whip up on a Sunday evening before the work week. It’s Tuesday, and I’ve had two for breakfast the last two mornings. I’m always in a rush in the morning so all I have to do is pop them in the microwave for 45 seconds and can eat them in the car!
1 cup chopped kale with stems removed
1/4 white onion diced
1/4 green bell pepper diced
1/4 Orange bell pepper diced
4 slices of deli ham chopped into small pieces
Kosher salt & pepper
A dash of cayenne
1 tsp of garlic powder
1/2 tbs grated Parmesan cheese
Throw all of the ingredients except the Parmesan cheese into a large mixing bowl and whisk for about a minute until blended.
