Buffalo Chicken Sloppy…. Lettuce wraps?

  
Not sloppy Joe’s… Sorry… But just as good!!! I was able to come up this recipe by varying the one I found on this blog. Thanks again Pinterest!

We usually don’t buy ground chicken but I decided to change it up a bit when I found 92/8% ground chicken on sale at Walmart. YES. It was Perdue brand. Hormone and antibiotic free too! Anyways… It was great with some Frank’s Hot Sauce. I really have only cooked ground chicken once before and it was buffalo chicken meatballs smothered in all kinds of cheeses. Considering I’m trying to diet here because bathing suit season is creeping up way too fast, I figured that wasn’t the best option for last nights dinner. 

We used Boston lettuce for the wraps instead of the heavy-carb rolls you would normally use for Sloppy Joe’s. I subbed baby sweet peppers for carrots and added a touch of blue cheese to the meat after cooked. If you don’t like blue cheese I’m sure ranch would be just as delicious! 

Recipe: 

1lb. ground chicken (92/8)

6 baby sweet peppers sliced

1/2 diced red onion

2 stalks celery chopped 

1/4 cup organic tomato sauce

1/4 cup Frank’s Red Hot Sauce

A dash of blue cheese dressing 

A ton of garlic powder 

A little cumin

Salt & pepper 

Sautée veggies in 1 tbs olive oil for about 3-4 mins. Throw in ground chicken and cook until browned. Add remaining ingredients and simmer 3-5 minutes until sauce thickens up a bit. 

Serve with shredded cheese, extra onion if wanted, tomatoes, and avocado. YUM!
